    摘要:

    为比较野生菊黄东方鲀与养殖菊黄东方鲀肌肉的品质,采用常规生化方法测定并分析了其肌肉中营养成分及部分氨基酸的含量。结果表明,野生组菊黄东方鲀肌肉中的粗脂肪含量显著高于养殖组(P<0.05),粗灰分含量显著低于养殖组(P<0.05);16种氨基酸中,野生组有6种氨基酸含量显著高于养殖组(P<0.05),而其他氨基酸含量则无显著性差异(P>0.05);野生组菊黄东方鲀肌肉中必需氨基酸(EAA)和鲜味氨基酸(DAA)的含量显著高于养殖组(P<0.05)。根据FAO和WHO提倡的相关评价指标,在营养、口感味道等方面,野生菊黄东方鲀相对于养殖菊黄东方鲀较优。

    Abstract:

    To study the difference of muscle characteristics between wild and cultured Takifug flavidus, proximate composition and partial amino acid composition in muscles were analyzed using conventional biochemical method. The results showed that the crude lipid content in wild T. flavidus was significantly higher than cultured individuals (P<0.05), while their ash content was significantly lower than cultured individuals (P<0.05). Among all of 16 detected amino acids, the contents of 6 amino acids were significantly higher in wild T. flavidus (P<0.05) and the others were not significantly different (P>0.05). The contents of essential amino acids (EAA) and delicious amino acids (DAA) in the muscles of wild T. flavidus were significantly higher than cultured individuals (P<0.05). According to the reference amino acids by FAO and WHO, wild T. flavidus were superior to cultured ones in terms of nutrition, taste and quality.
