Abstract:This study was designed to compare the muscle nutrient content of Cyprinus carpio var. color from different culture conditions,i.e.,paddy field culture(PF group) and pond culture(PC group).In terms of proximate composition,moisture content in the muscle of PF group were significantly higher than the PC group.The contents of glycine,tyrosine and cystine in muscle of PF group were significantly higher than PC group(P<0.05),and the content of total fresh amino acids were also higher in PF individuals.For fatty acid composition,the percentage of DHA and EPA in the muscle of PF group were also significantly higher than PC group.In addition to Mg and Na,the contents of all mineral elements were significantly in PF individuals(P<0.05).Based on these results,the nutritional quality of Cyprinus carpio var. color in PF group is better than the ones in PC group.
